Everyone loves chocolate—and being vegan doesn’t mean you have to go without it! What better expert to teach you the ins and outs of sweet, vegan chocolate-y goodness than Fran Costigan, author of “Vegan Chocolate: Unapologetically Luscious and Decadent Dairy-Free Desserts”? You’ll also learn how to make gluten-free variations for some of the recipes. Your decadent menu includes: Intensely Chocolate Trifle; Sacher Torte; Blackout Cake; and Eclairs.
Fran Costigan is a veteran culinary instructor, cookbook author, and the “queen of vegan desserts.” She knows that even though you want vegan, gluten-free desserts, they can still be decadent enough to be worthy of Valentine’s Day. Now you’ll never have to spend too much time fussing over these desserts in order to ensure that they’re remarkably rich and and decidedly chocolatey. Your dessert menu consists of: Dark Chocolate Ganache-Glazed Gluten-Free Brownie Bites with Marzipan Hearts; White Chocolate, Pistachio, and Matcha Mousse Pudding with Pomegranate Seeds and Mochi Waffle Garnish; Mocha Creme Brûlée; Gluten-Free Chocolate Chunk Cookies; Spice It Up Ginger Truffles; and Chocolate Jello Shots with Homemade Chocolate Vodka.

If you’re on a mission to make world-class vegan desserts, sign on for some “basic training” in the field. Learn the tactics involved in baking without dairy, eggs, and refined sugar, or odd ingredients. The entire operation was developed by Fran Costigan, vegan pastry chef-instructor and author of Great Good Desserts Naturally, More Great Good Desserts Naturally, and the new Vegan Chocolate: Unapologetically Luscious and Decadent Dairy-Free Desserts, the books considered the “bibles” of vegan pastry arts. You’ll gain the confidence to adapt many standard recipes to delicious vegan versions, as you learn about foundational pastry technique and ingredients specific to vegan baking. Quality organic, seasonal ingredients will be emphasized, including whole grain flours, organic fair-traded sweeteners (both liquid and granulated), vegan gelatin (agar-agar), root starches, non-dairy milks, sulfite-free dried fruits, chocolate, cocoa, pure extracts, leavening agents and much more. Novice and experienced bakers and everyone in between will benefit from the expert training offered in this unique intensive. Plating of desserts will be practiced daily and a dessert buffet party will be our finale.
Chef Fran, the “Queen of Vegan Desserts” will demonstrate, and you will taste, some quick to make, easy to love desserts, all made with high-percentage ethical chocolate. Fran will offer tips, tricks, and information about types of chocolate as we celebrate everyone’s favorite bean!

See the Frank Gehry-designed Binoculars Building just two blocks from the beach and you’ll have found Google Los Angeles. I’m certainly looking forward to doing an Authors@Google talk and demonstration cooking class. As this is google, the food is fresh, organic and very vegan friendly. I’m making the Chocolate Torte to Live For, Ganache Glazed and serving the cakes with Vanila Cream and fresh berries. A YouTube Video will be made and I’ll post the link. Working at Google LA has it’s benefits.
