I’m just home from Florida and headed to my daughter’s home for our Happy Thanksgiving meal. Normally, we cook together but not this year. Instead, I planned ahead and made these Pumpkin Cranberry Muffins using Spiced Pumpkin Butter and froze them before I left. Also in the freezer is the swap-out cake. This Cocoa, Cranberry, Pecan beauty that I made for The Philadelphia Inquirer article by Joy Manning for the Vegan Thanksgiving for Everyone article is sure to be a crowd-pleaser. When I get to Tracy’s home, the cake will be ready for a heavy drizzle of chocolate before serving.
