Simplest Maple Tofu Cream and Berries

  • 1 12.3 oz aseptic box firm or extra firm silken tofu, I used Mori Nu, pureed
  • 1/4 cup grade A Dark pure maple syrup
  • 6 tablespoons maple sugar
  • 1/4 tsp cinnamon powder, more to taste


  1. Puree the tofu in a food processor. You’ll have 1 1/2 cups.
  2. Add the maple syrup and maple sugar and 1/8 tsp of cinnamon. Puree.
  3. Taste and add more cinnamon, or more sweetener if desired.
  4. The cream is ready to use now, but will taste even better after a few hours in the refrigerator.
  5. Sever over berries, and add some seeds for crunch, or mint, or enjoy as is.
